Batch-cook once, eat easy all month. How long soups, stews, proteins and grains keep at 0°F/-18°C, how to chill, freeze and reheat safely, plus a label you can copy.

Freezer keeps food safe; quality drops over time. When in doubt, throw it out. This is kitchen organization info, not medical advice.

Quick chart — best-quality freezer times

  • Soups, stews, chili with meat: 2-3 months best quality
  • Cooked poultry pieces / meatballs: 2-6 months best quality — check the cut-specific row on the FoodSafety.gov chart
  • Cooked fish / seafood: 2-3 months
  • Cooked rice, quinoa, pasta: 1-2 months
  • Beans, lentils: 3-6 months
  • Blanched vegetables: 8-12 months
  • Sauces, pesto (no cheese), broth: 3-6 months
  • Keep freezer at 0°F/-18°C or below.

Chill fast, freeze flat

1. Cool within 2 hours: divide into shallow containers, ice bath if needed.

2. Portion for how you eat: 1-2 cup soup bags laid flat, proteins in single-layer portions.

3. Remove air, leave 1-inch headspace for liquids. Seal, then freeze flat, then file upright.

4. Freeze grains slightly underdone if you plan to reheat in sauce.

Reheat safely

Thaw overnight in fridge, in cold water changed every 30 min, or microwave if eating right away. Reheat to steaming throughout 165°F/74°C, stir soups mid-heat. Use thawed food within 3-4 days; do not refreeze thawed leftovers unless cooked again. Confirm current wording against FoodSafety.gov food safety charts.
