Tips that actually save time
- Season in layers - salt the onions, then the broth, then a final adjust with lemon or vinegar.
- Low and slow - stew and tagine stay covered; soup stays at a gentle simmer, not a boil.
- Double batch + freeze - label date and servings; freeze soup flat for fast thaw.
- Finish with acid - 1 tsp vinegar or lemon per pot, taste before adding more.
Food safety: refrigerate leftovers within 2 hours, keep them 3-4 days in the fridge, and reheat until steaming throughout (165°F). See the FSIS Leftovers and Food Safety guide (checked Sep 12, 2026). Times above are home-kitchen estimates - trust simmer state and a thermometer, not the clock.
Ask Chef Bento this week
Copy-paste into Chef Bento: "I have beef, potatoes and carrots for 4. Give me a single-serving stew plan for 2 nights + a grocery list and macros." Then send the result to the planner and the shopping list.
