5 Sauces Every Home Cook Should Master

A great sauce transforms simple ingredients into restaurant-quality meals. Master these five ratios, then assign each one to a real dinner in your week.

1. Classic Vinaigrette — Makes ~240 ml / 1 cup, ~8 x 2-tbsp servings

Ingredients: 180 ml extra-virgin olive oil, 60 ml lemon juice or red-wine vinegar, 1 tsp Dijon optional, 1/2 tsp fine salt, 1/4 tsp black pepper, 1 tbsp chopped herbs or 1 tsp honey optional.

Steps: 1. Add salt, pepper, Dijon and acid to jar. 2. Pour in oil. 3. Shake/whisk 20 sec until cloudy. 4. Taste, adjust salt/acid.

Variations: Lemon-herb for fish salads; honey-mustard for grain bowls.

Storage: Refrigerate sealed and shake to re-mix. Plain oil-and-vinegar base keeps up to 7 days; with fresh herbs, garlic or shallot, use within 3-4 days. Discard if off smell. Check current FoodSafety.gov food safety charts for guidance.

Planner hook: Assign to 2 salad lunches in the planner and add oil + vinegar + mustard to your shopping list.

2. Basic Tomato Sauce — Makes ~750 ml / 3 cups, ~4 servings

Ingredients: 2 tbsp olive oil, 2 garlic cloves sliced, 800 g canned San Marzano tomatoes crushed by hand, 1/2 tsp salt, basil leaves, pinch sugar optional.

Steps: 1. Warm oil, soften garlic 1 min, no brown. 2. Add tomatoes + salt. 3. Simmer 20 min uncovered, stir. 4. Tear in basil, adjust salt.

Variations: Chili flakes for heat; small knob butter for smoothness.

Storage: Refrigerate within 2 hours; use within 3-4 days. Freeze 2-3 months best quality at 0°F/-18°C. Reheat to steaming throughout (165°F/74°C). Check current FoodSafety.gov food safety charts for guidance.

Planner hook: Cook once, plan pasta night + pizza night in the planner.

3. Pan Sauce — Makes ~120-180 ml, serves 2-3

Ingredients: drippings from 2-3 meat portions, 120 ml dry white wine or broth, 240 ml chicken/vegetable broth, 1 tbsp cold butter, salt/pepper.

Steps: 1. Pour off excess fat, keep browned bits. 2. Deglaze with wine, scrape 1 min. 3. Add broth, reduce by half 4-6 min. 4. Off heat, swirl in butter, season.

Variations: Mustard, lemon or herbs at end.

Storage: Serve promptly; do not hold warm more than 2 hours. Refrigerate leftovers within 2 hours, use within 3-4 days, and reheat to steaming throughout (165°F/74°C).

Planner hook: Pair with planned protein + roasted vegetables in the planner.

4. Stir-Fry Sauce — Makes ~120 ml, serves 3-4

Ingredients: 3 tbsp soy sauce, 1 tbsp toasted sesame oil, 1 tbsp rice vinegar, 1 tsp cornstarch, 1-2 tsp honey, 2 tbsp water, garlic/ginger optional.

Steps: 1. Whisk all until cornstarch dissolves. 2. Stir-fry protein/veg, push aside. 3. Pour sauce, toss 1-2 min until glossy. 4. Thin with water if thick.

Variations: Chili oil or lime for brightness.

Storage: Refrigerate sealed and shake before use. Soy-vinegar base keeps up to 7 days; with fresh garlic or ginger, use within 3-4 days. Discard if off smell.

Planner hook: Add soy + sesame oil + rice vinegar to shopping list, schedule stir-fry night.

5. Tahini Dressing — Makes ~240 ml / 1 cup

Ingredients: 120 g runny tahini, 60 ml lemon juice, 1 small garlic clove grated, 60-120 ml cold water, 1/2 tsp salt.

Steps: 1. Whisk tahini + lemon + garlic + salt — will thicken. 2. Add water spoon by spoon to pourable. 3. Taste for salt/lemon.

Variations: Maple for sweetness; cumin or yogurt for bowl sauce.

Storage: Refrigerate sealed; plain tahini-lemon-salt base keeps up to 7 days. With fresh garlic, use within 3-4 days. Thin with water after chilling; discard if off smell.

Planner hook: Drizzle over salads, grain bowls and roasted vegetables planned this week.

Food-safety note

Refrigerate perishable sauces within 2 hours (1 hour if room is hot). Cooked sauces and leftovers keep 3-4 days refrigerated; keep freezer at 0°F/-18°C or below; reheat to steaming throughout (165°F/74°C). When in doubt, throw it out. This is kitchen organization info, not medical advice.
