Spoon chimichurri onto pork tenderloin at the end, using just enough to season the main bite without soaking the grains or vegetables.
Let hot food cool for a few minutes, then arrange the main, the side, and the fresh or crunchy pieces in separate groups so every bite keeps its texture.
Set aside apple slices, chimichurri, pumpkin seeds before reheating. Warm only the cooked components, uncovered, for 45 to 75 seconds.
