Cook or prep roasted beets separately so the side keeps its texture.

Spoon lemon tahini sauce onto lentils at the end, using just enough to season the main bite without soaking the grains or vegetables.

Let hot food cool for a few minutes, then arrange the main, the side, and the fresh or crunchy pieces in separate groups so every bite keeps its texture.

Set aside cucumber coins, lemon tahini sauce, walnuts before reheating. Warm only the cooked components, uncovered, for 45 to 75 seconds.
