The Reverse Sear Method
1. Season steak generously with salt and pepper
2. Place on a wire rack in a 250°F oven
3. Cook until internal temp hits 115°F (about 45 minutes)
4. Heat a cast iron skillet until screaming hot
5. Sear 1 minute per side
6. Rest 5-10 minutes
Temperature Guide
- Rare: 120°F
- Medium Rare: 130°F (recommended)
- Medium: 140°F
- Medium Well: 150°F
- Well Done: 160°F+

- Bring steak to room temperature before cooking
- Pat dry for better sear
